Description

Cupping Notes:
Midnight Bloom opens with vibrant, layered complexity. Expect notes reminiscent of red wine, prune, tropical fruit, cherry, and soft lavender. The mouthfeel is creamy and syrup-like, supported by juicy acidity. The finish lingers with refined sweetness and a wine-like tail that unfolds gracefully long after the sip.

Processing:
This standout profile is the result of Sebastián Ramírez’s exacting approach. Cherries are selectively harvested—95% fully ripe and 5% slightly underripe—then sealed in tanks for a 200-hour anaerobic fermentation enhanced with CO₂. This slow, controlled environment deepens the coffee’s aromatics and structure.
Post-fermentation, the coffee is dried for roughly 20 days on raised marquesina beds at around 40°C and 25% humidity. Afterwards, the beans rest for 15 days in GrainPro bags to stabilise. Each step is carefully calibrated to preserve clarity, complexity, and the signature elegance of El Placer.

El Placer Farms, led by Sebastián Ramírez in the highlands of Quindío, Colombia, reflects four generations of family heritage. With more than ten years of hands-on expertise, Sebastián pushes Colombian coffee forward through both tradition and innovation. He has become known for his mastery of processes such as Carbonic Maceration, Natural, Honey, and Co-Fermentation—methods that unlock striking, expressive flavours.

Situated in Calarcá at 1,750 m and complemented by the Hacienda Corcega milling facility in Quimbaya, his project cultivates exceptional varietals including Bourbon Cidra, Geisha, Pink Bourbon, Yellow and Red Bourbon, SL28, Wush Wush, and Laurina. Each variety carries its own character and narrative in the cup.

Sebastián’s philosophy centres on environmental responsibility—using minimal water, natural pest management, and regenerative practices. He also opens his doors to neighbouring farmers, sharing knowledge and fostering collaboration to strengthen the broader community.

The outcome is coffee that feels vibrant, intricate, and authentic—deeply tied to its origin and to the people who shape it.
